Does the term “slice and bake” mean anything to you? If so, then perhaps you know what I’m talking about when I say eating raw cookie dough straight from the fridge is one of life’s ultimate guilty pleasures?
That said, here at Buddha Butter BCN we were on the hunt for a vegan version of just that thing: raw cookie dough. After searching our usual vegan cooking blogs we discovered this AMAZING recipe from the Detoxinista website and proceeded to create our own version using Awakened Almond Buddha Butter, and a few other tweaks, and healthy ingredient additions.
We hope you will give this recipe a try; however, we should warn you, these bites are 100% addictive, so make sure to put on your “self-restraint pants” before you make them ;p Or, just plan to bring them to your next social gathering for the win!
Ingredients ( Yields approx. 16 bites)
- 1 cup almond flour
- 1/4 cup coconut oil, softened
- 1/4 cup pure maple syrup
- 6 tbsp Awakened Almond Buddha butter
- 2 tsp pure vanilla extract
- ½ tsp maca powder
- 2 tbsp ground flaxseed
- 1/4 teaspoon sea salt
- ¼ cup dark chocolate (chips or chopped-up)
Add all dry ingredients: almond flour, maca powder, ground flaxseed, and sea salt into your food processor, do a quick whirl.
Continue by adding all liquid ingredients in on top: coconut oil, maple syrup, vanilla extract and Awakened Almond Buddha butter. Now pulse until the batter comes together in a sticky clump ;p
Next scoop/spatula out the batter into a bowl and using your hands mix in the chocolate bits.
Using a soup spoon, scoop out small amounts of batter and then roll them into balls using your hands. Place on a flat tray.
Put the cookie bites into the freezer to set for 10-15 minutes.
You can serve them cold, or let them sit about 10 minutes before serving.
